Tasting and History
Start your pasta experience in Galleria del Grano, a room that exhibits our history prepared with loving care. You can see our machinery and documentation, communicating the values of a typical Gragnano product. Still visible is where the wheat used to be washed and processed before being used for the pasta production, together with various tools once used for the purpose.
After Galleria del Grano, we will give you a practical demonstration how to produce a few types of pasta along with a detailed explanation of the whole procedure and machines used in our modern pasta lab. We will show you our traditional processes, based solely on the use of large-grain durum wheat semolina (as was once milled on the site), with high levels of gluten and proteins, all combined gently with water from nearby springs. After the pasta is thoroughly worked, it is given different shapes. Each type of pasta is produced by a different nozzle made entirely of bronze this gives the pasta its high quality, with a rougher surface that combines better with the pasta sauce.
After this pasta experience we return into the Galleria del Grano where you will have a delicious tasting of two pasta dishes prepared exclusively for you and a typical Gragnano wine (fizzy red wine).
